I Ran a Half Marathon

…and I am dang proud of my time!

Rochester Half Marathon
Chip Time: 1:38:36
Average Mile Pace: 7:32
Overall Place: 156th
Age Group Place: 14th

I was bookin’ it!  It’s my mile pace that I’m really proud of.

Yes, ladies and gentlemen.  That was a PR.

Yeahhh boyyyyy!

Last year I ran this same race with a time of 1:45:52, averaging 8:07 per mile.

What a difference a year can make!

I’m also lovin’ my form.  That’s something I have been working on in practice.

It’s not an originally sentiment, but 13.1 truly is love!

Now if I could just find the time to keep it up.


I appreciate your help Hal Higdon, but I think I am going to try this for a while.

I am BUSY!

Whewwww.

Just trying to breathe here.

School is going to be in.tense. this year.  I’m trying to be as organized as possible.  I took all my assignment due dates from my syllabi and added them onto my calender.

This is just preliminary. More assignments to come!

Today is also the first day of my new job as the RIT Student Living Center (aka gym) nutrition counselor. Currently, I have no clients, but I am hopeful!  An e-mail will be sent out to students and faculty notifying them of this awesome free service I will providing!  Just doing my part to serve the masses. ;)


No promises on making you less insane, but seriously, come visit me! No need for health plans – it’s FREE!

Back to work and studying.

Back to School and Caprese Pasta Salad

Today is the day.  Back to school.

First day of senior year. Man, this has been a long time coming!  I’m excited and nervous.

Crazy RIT.

At least I was able to squeeze in a little Labor Day fun yesterday.

We went to Buffalo for a family picnic.

I baked cupcakes.

My first foray in cake decorating.

Nothing healthy or interesting about these, folks.  Boxed cake and frosting.  Just fun to mess around with. :)

I wish I I had a few more hours yesterday morning to play with my decorating tips.  I need some more practice.  Anybody want cupcakes?

I also made a quick ‘n easy pasta salad.

Caprese Pasta Salad

Prep time: 30 minutes

Ingredients:

  • 16 oz bow tie pasta
  • 1 container of grape tomatoes, halved
  • 16 oz mozzarella
  • large handful of fresh basil
  • light Italian dressing
  • ground black pepper

Instructions:

  1. Cook your pasta according to package.  Rinse with cold water and drain well.  Transfer to large bowl, pour a little Italian dressing, and toss to prevent sticking.
  2. Halve grape tomatoes, cut mozzarella into bite size pieces, and chop basil.  Add to pasta bowl.
  3. Add more Italian dressing (about a cup) and black pepper to bowl, toss.
  4. Refrigerate before serving.

This salad is light and refreshing, but could be beefed up with whatever you have on hand.  Add olives, artichokes, grilled tofu… the possibilities are endless!

Pumpkin Protein Muffins

Even though we are in the middle of a heat wave, September is upon us dear friends, and I’m going to take that as a go ahead to start going pumpkin crazy!

My first endeavor of the season:

Pumpkin Protein Muffins

Makes 12 muffins

Prep Time: 15 minutes

Cook Time: 15-18 minutes

Ingredients:

Instructions:

  1. Preheat oven to 375 and grease muffin tins with canola oil spray.
  2. In a large bowl combine whole wheat flour, NuStevia, salt sense, cinnamon, allspice, nutmeg, and soy protein powder.
  3. In a smaller bowl combine almond milk, egg whites, and raw pumpkin.  Whisk ingredients together for about 30 seconds until smooth.
  4. Combine the wet ingredients to dry and mix until there are no lumps.
  5. Fill muffin tins about 3/4 full.
  6. Place muffins into oven for about 15-18 minutes.
  7. Let the muffins cool in tin for 5-10 minutes before before removing and placing on a baking rack to further cool.

Wegmans is the Best

YAY! My Menu Magazine arrived in the mail!

I have never subscribed or requested to be on their mailing list.  It just shows up at my door.  I have a feeling it’s there way of saying, “Thank you for the obscene amount of money you spend at our store each week.”  No, Wegmans.  Thank you.

As pretty much everyone knows, Wegmans is the best grocery store in the land.  Wegmans is king. Wegmans is the rock star of grocery stores.  Wegmans is to us grocery shopping folk what Justin Beiber is to teeny boppers.

See what I mean?

I might very well squeal, “I love you Wegmans” in a moment of insanity!

And now I love them even more.

As I flipped open my mag, right on the first page…

It’s the new Choose MyPlate!

Oh, Danny Wegman, how I love you!  Way to spread the word AND encourage the good shoppers of Wegmans to eat more veggies!

If you aren’t convinced yet, check this out!

The frosting on Wegmans’ delicious baked goods is now trans fat free!

YAY!

And on that note, I promptly got my self down to the store and bought lots and lots of goodies.

I hear that once you go to the real stuff, you never go back.

I’ve always wanted to try this stuff. All-natural and no high fructose corn syrup!

Raw Honey is also something I have always wanted to give a shot.

This has the possibility of being very frustrating. Patience is not always my strongest virtue.

So I can bring salads to school and keep them nice and cold. And the dressing separate. No wilty greens for me, thank you!

Another new thing. I am still on the fence on how I feel about stevia, but I found a delicious recipe for Pumpkin Protein Muffins and thought I’d try it out.

  • Grocery shop @ Calkins Rd. Wegmans (45 minutes)
    • Honey
    • Muffin making ingredients
    • Easy-to-pack lunch foods
    • Lunch tupperware (My supplies have significantly decreased…Where they’ve gone, no one knows.  Does this happen to anyone else?)
    • Fruit to freeze
  • Get quarters (10 minutes)
  • Do laundry (3 hours)
  • Make another freaking appointment to get my oil changed (I made an online appointment last week that apparently never got sent and when I called to confirm, they said they never received it! Grrrr…) (10 minutes)
  • Write bio for my nutrition counseling job (30 minutes)

I forgot to call to make an appointment.  Eh, not that big of a deal.

I also accomplished a few other things too! I picked up Krause which arrived in the bookstore today, went out to lunch with the boyfriend, and made muffins (I wasn’t planning on doing any baking today- just shopping for ingredients)!  I forgot C-dawg had a boys night out party thing at his dad’s, so no dinner and hanging out tonight, but we have plans for tomorrow. :)

Whew.  What a whirlwind day.  I’m exhausted.
