I’m Baaaack

I have been really terrible about doing any sort of updates on here.

It’s not like I don’t have the time.  I definitely could squeeze it in during the time I drink coffee at 4:45 the morning and stare at facebook like a freakin’ zombie before I go out for my run in the pitch black.

That sounded like complaining.  Which it wasn’t.  Really.  Daylight savings has graciously given me some incredible sunrises as I mosey my way back in.  {I only silently whine to myself during that first “bleeeeep” of the alarm…}

But really…

I’m going to try and do better.

Afterall…

Represent!

So a quickie “what’s new in my life” before I head out the door:

  • In a week, I will have lived in California for 3 months! {Where has the time gone!}
  • I finished my Food Service rotation and loved.it.
  • On Friday, I will wrap up my rotation at STRIDE (Science through Translational Research In Diet and Exercise) and then I have a whole week off!
  • I am itching to race.  Anyone have any good suggestions? Preferably a half marathon near the Central Coast.
  • And lastly, not to brag or anything, but my life pretty much rocks.  I am happier than I can ever remember in my entire life.

And with that I will leave you dear friends.

If you have commented or e-mailed me within the last, oh, two months, I will try and get ‘atcha sometime within the next week.

Schedule Adjustment and Shopping!

Two weeks from today I will be arriving in California!

I can hardly believe the time is almost here. It seems like just yesterday I was packing up my apartment in Rochester, and making the journey home. This summer flew by.

As with any new life chapter, comes a new routine; I am going to try to mess around with that while I’m home to help ease with “adjustment anxiety” when I get to California. I know I will no longer be able to have nice leisurely mornings where I read my coffee, catch up on my google reader, blog, and go workout. Once my internship begins, I will be hell on wheels from the moment my feet touch the floor in the morning.

This is completely okay with me, but it does mean that I will have to adjust my schedule. I must admit, I am a little nervous about switching up all my “me” time to the evenings. Mustering up the motivation to hit the gym in the evenings will be a challenge, as will sitting down to blog at night, instead of zoning out in front of Hulu.

So for these remaining two weeks in Washington, I am going to attempt to switch it up.  Look for OtRtRD updates later in the day.  This actually may work in my favor, as the events of the day will be more fresh!

Alright, now that I’ve got that off my chest, time to talk about what has been filling up my time since I last updated.

Thursday

I put approximately 21 miles on the ole’ legs.  1/2 running & 1/2 cycling.

This was followed by a bit of internship/moving prep, which included a trip to Costco…

Ohhhhh heck yes! I am a proud Costco Cardholder! Can’t wait to buy veggies in bulk down in SLO!  hah!

Then this happened…

Friday

Moms and I traveled over the mountains and through the woods to grandmother’s house.  We helped clean her house, and then went s.h.o.p.p.i.n.g!  Just a few internship-friendly items.

My favorites?  The animal print pencil skirt from the Loft {completely on trend for Fall} and the newest edition to my Michael Kors shoe obsession a la Nordies.

I also picked up a pair of black pants from The Limited [finding black pants is always a huge win in my book], a couple of short sleeve tops from Banana, and another pair of shoes from Macy’s.

For a quickie half day shopping trip, I’d say we did pretty well!

Now, I am off for my run, and then up to the water slides for the day!

Whirlwind of a Day

AHH!

Whew, lemme just breathe for a second here.

I have been go, go go since I woke up this morning – Working on some very exciting things!

First exciting thing:

On the Road to RD got a face lift!  How do you like the updated look? New header, new fonts, new profile picture {a la Nick Nameless}.  I felt it was time for a little spruce up.

I think I’ve found an apartment in California!

This has been my mission over the past four days: making calls, setting up appointments, juggling schedules, sending e-mails.

Today I turned in my rental application, and as long as everything goes smoothly, I will be living in a gorgeous 3 bedroom with my two lovely roommates right on the golf course and the beach! AH!

A huge shoutout to my intern girls who helped scope the place out for us!

Third exciting thing:

I have all my ducks in a line for my Cal Poly paperwork, and will be sending that out tomorrow!

One less thing I have to worry about!  September 4th will be here before I know it!

Fourth exciting thing:

The folks at Chebe contacted me to see if they could feature my Fresh Moz and Basil Pizza Muffins on their Facebook.

I of course said #jeah! Check it out yo!

Fifth exciting thing:

I am going to Yoga in the Gardens tonight!

How fun is that? I’ve always wanted to take an outdoor yoga class! And this is the perfect way to calm my racing mind.  I may also try out Min’s Cucumber Face Mask.  Helloooo stress relief. :)

Just by writing that all out I feel some relief.

Foodie Pen Pal Reveal and Giveaway Winner

I received my pen pal box of goodies from Meagan at A Zesty Bite. {Go check out her blog – it is super cute with tons of great recipes!}

I gave Meagan had a bit of a challenge with my eating habits – gluten-free and vegetarian {well, I guess now I would technically be labeled as pescatarian, but I don’t like labels}.  She did awesome!

The box was brimming with goodness!

Hello, Justin’s Chocolate Hazelnut Butter.  I love you.  I have eyed this at the grocery store I don’t even know how many times, but never could find a good enough reason to purchase it for myself.  This right here is the reason I signed up for Foodie Pen Pals in the first place.

More peanut butter {Meagan knows me well!}, AND a box for making GF pizza. This was so perfect, as the afternoon when the box arrived, I had been looking at pizza recipes!

Love pistachios! I’m thinking of baking a sweet treat with these… Keep an eye out!

And last but certainly not least, Beanitos!

This was the first thing I opened, and they were really good. My Dad and I {almost} scarfed the whole bag down that evening, and I have been craving them ever since.

Thank you Meagan for such an AWESOME package!

July Round-Up

Can you believe my favorite month is almost done?

July was a blast!

Let’s Review:

Vacation

And of course My Birthday!

And we can’t forget the Giveaway for a Free Kitchen Scale by SlimKicker. Incidentally, today is your last day to enter to win!

Also, there are a few lesser known activities here on the ol’ blog, such as a couple of extended family get togethers, and my foray into the wild world of swimming.  If you follow me on Daily Mile, then you may have caught a glimpse of my splashing around.  I don’t have any big announcements as far as signing up for a triathlon, but I am testing the waters, so to speak.  I am really bad, but getting better.  All swimming advice is welcome!

July also welcomed a new addition to my diet :: Fish!  A combination of constant fatigue and delayed recovery time prompted me to slowly start incorporating this delicious protein source  into my daily meals.  It seems to be helping, especially with recovery.  I’m still working on the fatigue part.  The past few runs I’ve been having weird blood sugar drops half way through.  I’m playing around with some different pre-run options and I’ll let you know which seems to be working!

So that brings us to August!

Now we get into Operation :: Internship Preparation.

I’ve been slowly checking things off my to-do list, but with the first of the month around the corner, I am starting to feel the pinch. 37 Days until Orientation!

  • Renew Academy Membership
  • Renew Nutrition Care Manual
  • Request transcripts
  • Receive Verification Statement
  • Get a physical/TB test
  • Change healthcare
  • Send all paperwork to my Internship Director
  • Find an apartment
  • Make arrangements for moving

It’s all very exciting, although I am slightly apprehensive to make another move to uncharted territory {Chicago, New York City, Rochester, and now add SLO to that list}.  Thankfully, through the wonder of Facebook, all the interns have made contact, and I think we are going to have a great bunch!
