I’m Not Dead

by Stephanie

Not.even.close.

Life has been so kick ass lately that I just can’t figure out a time to squeeze in blogging.

Hiking, running, interning, all the fun that comes with a new boyfriend, meet the family, babysitting, concerts, beaching it up, wine tasting, eating at amazing restaurants, bike night…

Hike up Bishop’s Peak.

Dinner at the Cracked Crab.  Obviously excited.

Wine tasting.  If it fits, Chris sits.

{For above photo reference.}

Neon Tree // Offspring concert.

Bike Night.  Theme :: Paper or Plastic? Brigade of the Spatulas! {We totally had the best costumes, btw.}

I’m exhausted, but so so so happy.

I’m working on figuring out a morning routine – things are still slightly sporadic – so hopefully I can squeeze in a little more social media love.

I guess I should mention how much I’m loving being an intern too.  That’s really important.  Food service rocks.

I will try to update you on that later.

Right now I want wine and Grey’s Anatomy.

Peace out homies.

It’s a Good Life

by Stephanie

What a weekend.

I can’t stop smiling.

Beach, beer, costumes, good food, awesome people, this video…

And this one…

You’re welcome.

And to top it all off, my background check went through! Woohoo!  I get to start at French Hospital tomorrow!

I have work to do, and I’m already running behind schedule, so that’s all you get for now.

Oh, man. So happy.

Have a great Monday!

Poster Sesh

by Stephanie

Well, hello there.

I just can’t get myself in the mental headspace to do work.

+ 10 days until graduation.
+ 5 days of classes.
+ 3 busywork assignments. {whyyyyyyy?!}
+ 2 papers.
+ 1 exam.

All I really want to do is run and stretch and read.  I long for summer.

Just gotta keep my head in the game for a little while longer.

_____

As you may remember, I displayed my Senior Thesis – first at the NYSDA Annual Meeting & Expo, and second at the Imagine RIT Festival.  I would say that both events were a success!

Poster session!

Lots of booths & swag!

Saw President Sylvia Escott-Stump of the Academy of Nutrition and Dietetics speak (cool!!).

And spent some quality time with my girls.

My.friends.are.so.beautiful.

It’s so strange going from spending every waking moment together while we struggled our way through MNT, to hardly seeing them at all on campus.  Sad.

_____

Next up was the Imagine RIT Festival, wherein which the whole campus fills with students’ interactive demonstrations, exhibitions, and research.  It’s a day dedicated to innovation and creativity.

Jamie totally rocked it out!

A fun and educational weekend!

Alright, I’m off to run, followed by my first final exam {wish me luck! Blerg!}, and ending my day with our last Student Dietetic Association leadership hand-off meeting/party.

Wahhh! I am so nostalgic!

I love my RIT.

Pulling myself together now.

*deep breath*

Later Braniacs.

Embrace It.

by Stephanie

As I mentioned yesterday, I ran a race!

The Flower City Half Marathon.  Nice medal, huh?

It was a cold, but sunny morning.  I arrived bundled up in cold gear, gloves, and ear warmers.

I got to the race about 15 minutes before the gun, which was just enough time to hit the bathroom and get in line without freezing.

I got rid of the gloves about 4 miles in, but regretted that decision instantly.  For a good chunk of the rest of the race, my hands were strategically pulled up in to my sleeves.

The race route provided a nice little tour of Rochester’s downtown, East Ave., and Park Ave. areas, before getting mean with the hills.  We trudged up the hill at Goodman (one that I always run down), then through Highland Park and into Mt. Hope Cemetery.  My legs were screaming and my breathing was heavy, but I managed to pass a few, and even more as things evened out.  I think my my hill training, albeit very little, helped. Either that, or the hills simply helped warm me up, because after moving out of Mt. Hope and on to the canal/U of R stretch, I felt much more relaxed.

I was able to pick off a few more people, but was passed by one — my neighbor from across the hall!  Nice work, Kendra!

I finished the race strong, but I can’t help but be a little disappointed by my time.

Results
Time: 1:31:32
Pace: 6:59
Overall Place: 106/2252
Female Place: 20/1299
Age Group Place: 5/280

I really, really wanted to break a sub-1:30, but after 6 weeks of training, I suppose I’ll take my time.

A 1:29:59 time would require a 6:52 min/mile pace.

I have 6 more weeks until the next one, so shaving that time off is TOTALLY do-able.

Let’s look at the positive here:  This is a big PR for me.

This past fall at the Rochester Half, I ran the 13.1 miles at a 7:32 pace with a total time of 1:38.

I’m making progress.

_____

Now, I want to switch gears.

There was a death in the Wenatchee family.

…..

It came as such a shock when my little brother told me yesterday.

J.D. was such a good kid.  So sweet. So generous. So wise for his age.

How could this happen?

…..

And it made me think of the people in my life.

I want to go and do and live and love and laugh all to the tenth power.

…..

“Don’t be afraid of death, be afraid of an unlived life.”

…..

That’s the plan.

Love you all.

It’s a Party!

by Stephanie

Well hello baby loves.

Last night we celebrated something awesomeKATIE’S Birthday!

We went to Lento, which was absolutely divine.

Here is a brief description found on their website:

“A truly gourmet experience, everything from the bread on your table to the dessert at the end of your meal is made completely from scratch.  Lento features daily menu changes along with an emphasis on locally grown and organic food.

The food, drinks, and company was amazing.

We, of course, started out with a round of drinks.  And to our delight, Thursday nights are buy one cocktail, get the second free!

Greyhound
Grapefruit Vodka, grapefruit juice, grapefruit bitters

Something Wicked…
Kaffir Lime Vodka, coconut rum, carrot, orange, cilantro

Pisco Sour
Pisco, lemon, lime, egg white, bitters

I’ve been on a Pisco Sour kick lately.  While this was good, I think I still prefer Good Luck’s.

Next up was a variety of oysters on the half shell.

Katie had to convince both Annie and I to give them a try…

We both worked up the courage to give them a go!  I’ll try anything once!

Definitely a success! They were very good!

Our meals arrived shortly after…

Annie: Parsnip and spinach cakes with curried lentils in a carrot ginger sauce (vegan)

Katie: Spicy shrimp coconut soup with rice and cilantro

Stephanie: Cavatelli pasta, wild mushrooms, Red Russian kale, tomato sauce, Pecorino Romano topped with toasted bread crumbs (Obviously, I was not following my low FODMAPs diet last night!)

Oh my goodness. This was to. die. for. The rich flavors, the exquisite combination of textures, ohhhhh… I can’t wait for lunch time leftovers! My mouth is watering.

More oysters!

More drinks!

The Red Queen
Mandarin Blossom Vodka, peach blossom liqueur, blood orange syrup, lime

The Main Squeeze
Chinaco Blanco Tequila, Aperol, grapefruit, lime, ginger

We can’t forget dessert!

Espresso ice cream filled profiteroles.

All three of us are coffee addicts, so the dessert decision was an easy one to make.

Then it was across the courtyard to Salena’s for birthday margaritas!

Margaritas must be had on birthday’s.  It’s a rule.

Happy Birthday Katie!

Now time to run, cook, and rest up before part 2 of the celebration!  Oh yes, nutrition girls know how to do it up right!

Have a great Friday!
