Menus + Spreadsheets + Games! Oh my!

Well, hello there.

Still no word on my background check, but I’m keeping busy.  And thankfully, I have a new project {more on that in second}.

I finished up my trivia game…

Um, of course I started with a question on fiber.

This is the reaction I’m looking for from the employees.

I also compiled all my recipes and completed the two cycle menus.

And all together now!

Oh spreadsheets, how I love you.

I’ve still got work to do on the Employee Incentive Program, and as I mentioned previously, I have a new project to work on as well!  I am to create an event for National Eat Healthy Day {November 7th} for the hospital cafe!  I get to design a heart healthy menu to serve that day, a healthy eating exhibition, some take away recipes, plus whatever else I come up with!  My ideas will be presented to the CEO and others at French.  Ahhh! So cool!!

So with that, I better get crack-a-lackin’.

Fresh Moz & Basil Pizza Muffins

Heyo!

Comin’ ‘atcha bright and early, so I can squeeze in a run and lift before my Nutrition Care Process Webinar.  Oh yeah, I’m stoked to get down with nutrition diagnostic language and charting.  I know there are some other future RDs out there that like to write a mean PES statement.  It’s okay, don’t be shy.

On to the topic of today’s post :: PIZZA!

Not too long ago, C-dizzle sent me a picture he found on the internets of pizza in muffin form.

{Uh, genius. Can you say perfect portion control?}

And then that same day I received my Foodie Pen Pal Box from Meagan that contained a box of gluten-free pizza mix!

It was fate!

So I bring you…

Fresh Moz & Basil Pizza Muffins

{vegetarian}
{gluten-free}

Prep Time: 30 minutes

Cook Time: 16 minutes

Yield: 12 muffins

Ingredients:

  • 1 box pizza crust mix (I used Chebe which had a really good taste!)*
  • 6 oz fresh mozzarella
  • pizza sauce
  • handful of large olives, chopped
  • fresh basil

*You can make this with conventional pizza dough too!

Instructions:

  1. Preheat oven to 450 degrees.
  2. Prepare muffin tin with non-stick spray.
  3. Prepare pizza dough according to package instructions.
  4. Divide dough in half, saving half for the top of the muffins.
  5. Take one half of the dough, and create 12 even balls.  Roll out into a disc like shape and press into the bottom of the muffin tins.
  6. Spoon a teaspoon of pizza sauce onto the crust.
  7. Add desired toppings, such as a quarter of an ounce of mozzarella, and a slice of olive.
  8. Repeat step 5 with the remaining dough.  Pinch the ends of the top and bottom crust together.
  9. Top pizza muffins with more sauce, cheese, olives, and basil, as desired.
  10. Place muffin tin in the oven for 16 minutes, or until cheese turns a golden brown.
  11. Remove from oven and let set 5 minutes before removing pizza muffins.
  12. Enjoy piping hot!

And now for the instructions via pictures…

Gather up your ingredients, and prepare your pizza crust.

Roll out the crust into discs and place in muffin tin bottom.

Add {inside} toppings.

As you can see I used pre-sliced fresh mozzarella, which I then quartered for my miniature pizza muffins.

Add the top crust and pinch together.

And more toppings!

Pop in the oven and enjoy!

As you can see, my toppings slid a bit to the side during baking. Smaller chopped olives and basil would be my recommendation. But don’t worry, it still tasted awesome!

Dirt Cheap – Race #1 :: Recap

Well, I got the chance to run a trail race MUCH sooner than I had thought!

Last night, I joined my friend Josh (remember, the speedy kid) and the rest of the trail running crew, and raced in Fleet Feet’s first installment of the Dirt Cheap Trail Race Series.

I really like the illustration on the bib.  Mud Man/Swamp Thing.

The race really was dirt cheap – only 12 bucks!

Obviously, I didn’t have time to go get new trail running sneaks, so my good ole’ Mizunos had to do. [I wish I would have taken pictures last night of them all muddy, but I was exhausted.]

I felt fairly comfortable in the for the majority of the race, although the leaves and loose dirt sometimes scared me.  And the downhills…  We were talking afterwards, and apparently trail running is something that, over time, you get a feel for.  You can’t keep tight.  I was watching some of the other runners and they put the arms way out for balance.  It seemed to help!

BUT near the middle of the race, I did lose one to the mud, which made me super angry as four guys passed me.

Don’t worry.  I caught RIGHT back up {after getting the damn thing back on, mud and all} and passed them.

RESULTS
Time: 39:40
Age Group Place: 1st (!!!)
Women’s Place: 2nd
Overall Place: 34th

All in all, I’m pretty pleased with my results, although I wish I was stronger on the steep hills.

More training!

And a trip to Medved for some better shoes. Ha!

Trail Running Shoes!

Heyo!

I’ve been considering purchasing my first pair of trail running shoes!

I may be running in a trail race, and I think it would be idiotic to not have the proper gear and sprain an ankle.

Also, I don’t think these would look as hot if they were covered in mud. ;)

I’m thinking trail running shoes will go to good use back on the West Coast – not a one race type of deal – so, being the good, little consumer that I am, I have done a bit of research to make sure I make the right decision and get a good fit.

{On top of all this, I got the Runner’s World Trail Running Special Edition in the mail yesterday. It’s a sign!}

Okay, so here’s what I’ve found…

The Shoe

The first thing you want to do is decide if you want a shoe designed only for trails, or a hybrid for a mix of road and trail running.  That’s going to make your shopping a bit easier.  Look for these three categories: Road/Trail Hybrids, Rugged Mountain Runners, and Minimalist/Barefoot Race Shoes.

The tread you choose in a shoe depends on the type of trails you will typically be running.

  • Look for shoes with an aggressive tread to grip and provide stability on rough terrain.
  • Running on muddier trails?  Look for shoes with wider lugs.
  • For steep, difficult terrain focus on more structure and support.

Some shoes may have a stiffer sole and toebox to protect feet from rocks and roots.  Hello, safe tootsies!

Other shoes may be super light and flexible, but have much less protection.  Choose shoes like this if you are an agile runner and comfortable with trail running.

Another feature to look in to is breatheable liners.  Choose waterproof if you predict you’ll be encountering lots of moisture like puddles or sweat.

And like all running shoes, replacing them every 300 miles or so will help ward off aches and pains!

The Fit

Fit is most important aspect for preventing blisters and black toe nails.  When you decide to take the trip to the shoe store, go in the afternoon, and bring along your typical socks and orthotics.

Determine your foot shape: wide, narrow, flat, high arch, curved.  You can do this by the wet foot print test, or simply have your foot/gait analyzed by a running shoe expert at the store.  They will know if you need extra motion control.

Your new shoes should feel comfortable right out of the box.  A good test is to walk down an incline.  Your toes should touch the tip of the shoe, but fit snug.  If you are unsure about a shoe, it’s probably not the right fit for you!

If you feel like you need a little extra support, insoles like Superfeet (which I wear in all of my road running shoes) are a good choice.

I’m kind of on the fence with a more minimalist shoe {as you remember, I did want to get a pair earlier this spring} and a hybrid shoe.  Eeek! This is exciting!

Even though I have done a little preliminary homework, I know I am definitely not an expert.  Leave me a comment if you have any tips/tricks/advice when it comes to purchasing trail shoes!  I will certainly be conferring with my friendly salesman at my favorite running store to make sure I have made the right choice! And you should too!

Aspiration {Inspiration} :: Train HARD

Today I am heading in to Week 4 of Half Marathon Training!

I am feeling better and faster and stronger than I ever have while training for a race.

Here is the breakdown of all my training activities (including cross-training).

Keep at it.

My pace is much more steady, not to mention, quicker than in the past.

My GI troubles seem to be waning thanks to my new Low FODMAP Diet.

It’s all coming together.

I am incredibly motivated to get out there a kick butt!
