Brooks Pure Flow 2′s and MATCH DAY!

by Stephanie

Hey there heyyyy!

So if you follow me on facebook or twitter or instagram you know I have been raving over my NEW Brooks Pure Flow 2′s.

I was in dire need of new running shoes, and after I started having a little medial arch pain, I got myself RIGHT down to Running Warehouse.

The girl who helped me was so friendly.  I initially went in there thinking I would just pick up another good ole’ pair of mizunos, but I wanted to try out a few other pairs just to be sure.

So glad I did because as soon as I tried on these babies, I was hooked.

Lightweight, plenty of cushion, great arch support, and a biodegradable sole – hello, I’m saving the landfills!

IMG_6004

The Brooks Pure Flow 2′s weigh 7.2 oz, which is slighter lighter than my Mizuno Wave Precisions at 8 oz. #racefaster

I love the asymmetrical lacing and “burrito” style fold over tongue, which really helps it stay in place. Don’t you hate it when your shoes get all wonky to one side?

IMG_5976

It’s also got this fancy split toe – which honestly, I can’t feel any difference. Ha!

IMG_5998

Pretty sick, huh?

Now I’ve just got to get my lazy butt out for a run.

Let me know if you matched at Cal Poly!
{Congrats Karen!}

And remember, if you didn’t match this time around, don’t give up on your dreams! You’ve got second round, and fall match, PLUS time to make yourself a stronger candidate! YOU CAN DO IT!

Rotaract COOKIE Fundraiser

by Stephanie

Good Monday morning to you!

I’m on my 4th cup of coffee.

I should take a typing test right now, because I am a SPEED DEMON!

drink_coffee

ZOOMIN’.

Three day weekends allow for things like 7 cups of coffee.

{Which I don’t feel bad about after drinking this article.  I am pro- anything that allows me to incorporate more of my vices into my everyday life.}

And three day weekends is what I will be getting up until January! WOOHOO!

No more Monday classes = 1 of the few perks of being an intern.

_______

Let’s rewind to my weekend baking extravaganza with Rotaract.

First, for those unfamiliar with what Rotaract is {because I had never heard of it until about 2 weeks ago either}:

Rotaract is a Rotary-sponsored service club for young men and women ages 18 to 30. Rotaract clubs are either community or university based, and they’re sponsored by a local Rotary club. This makes them true “partners in service” and key members of the family of Rotary.”

It’s like the young professional version of Rotary.  Cool, huh?

And there are clubs are all over the U.S. {even in little ole’ Wenatchee!}

So anyways, I sort of forced my way in to helping – my friend told me of this cookie fundraiser he was doing for the SLO Noor Clinic and I immediately wanted to get involved. {Hello, I love extending recipes and calculating food costs.

Two weeks later I was baking cookies along side a group of awesome 20-somethings.

vintique_image(1)We had quite the operation going on.

+ 5 batches at a time.

vintique_image(3)

+ 4 ovens blazing.

vintique_image

+ 12 batches of chocolate chip.
+ 5 batches of peanut butter.
+ 5 batches of sugar.

And then we packaged them up in cellophane with nice ribbon {which I wish I would have taken a picture of…}.

I think our final total came out to be about 700 total cookies baked!

Cookie monster approved.

And don’t worry, we did have some veggies and hummus to balance out the sugar overload.  As a future RD, I approved.

Can’t please them all.

All in all a very successful day for a great cause!

I’m off to Power Yoga and then to run up a big hill.

My First California Race

by Stephanie

Good Morning!

It is a gorgeous sunny day here on the Central Coast – the perfect way to kick off my Thanksgiving Break!

Woohoo!

My plan is to just relax, clean, and workout.

So today:

  • Beach Run
  • Yoga at noon with my favorite teacher
  • Get my tires checked out – the flat tire light is on… wah wahh
  • FREE Personal Training session at 3:00 (thank you Kennedy Fitness!)
  • Yoga Flow at 4:30
  • Drink wine

Not too shabby, eh?

So in other news, I signed up for my first California race!!

I’m going to run Castle to Coast on January 19th!

It’s a shorty 8.2 flat and fast course.

Last year’s 1st place woman ran a 6:15 average min/mile pace, and the second place winner ran  6:58s.

I’m thinking I can get my butt back in racing gear to come in somewhere between that.

As you may probably don’t remember, I ran an average 6:59 pace at last Spring’s Flower City Half Marathon.

My goal is still a sub-1:30 half, so if I could be running at a 6:50 pace, I would be on the right track for that. And with 5 miles less in Castle to Coast, I think this is totally, 100% doable.

Woo!

I’m excited!

I have a goal!

6:50s here. I. come.

With that being said – anyone have any ideas where I can do dreaded track workouts?

Sorry to end on that note! Ha!

Happy Monday!

Dietetic Internship :: Week 1 & STRAVA Running App

by Stephanie

Happy Saturday party people.

I don’t know about you, but I am exhausted.  This week has been such as awesome mix of hard work and fun.

First things first, #internshiplove.

I have been working my bootay off.  I never thought I would say this, but I am l.o.v.i.n.’ food service management.  It’s seriously like being a party planner.  I get to look at recipes all day, make posters, create menus, organize special events, put together gift baskets, hire caterers… the worst part (which really is not that bad because I <3 spreadsheets) is the food costing, simply because it’s tedious and a bit repetitive.  I think that this is partially due to my lack of a experience.  I am slowly developing processes here and there to get things movin’.

Here’s some of the stuff I’ve been working on:

National Eating Healthy Day Special Cafe Menu

Fire Safety In Service

Food Costing/Requisition

Obviously, a work still in progress… ha!

_____

Besides getting my work done, I’ve also been doing work.  Girlfriend’s been getting up at 4:30am to get in an-albeit short-run.  Now, I can’t complain because I have a motivator.  My new favorite person in the world, Chris, introduced me to this new app called Strava.

Everyone say, “hi Chris!”

Chris says hi. :)

Seriously, how cute is he?  Chris is a mountain biker, who is, as we speak, racing//kicking ass somewhere in the hills of California.  Woohoo! But anyways, back to my story… So Chris introduced me to this app, Strava, which is basically like a Garmin (I think they are affiliates, or something).

You start your run or ride on your phone…

Yes, mom, I’m bringing my phone on my runs now.  Happy? ;)

And it maps and times your run.

I’m obsessed with my splits breakdown.

Uh yea, mile 2 was a little hilly {as you can tell my slow ass 10 minute mile pace…}

From these maps, Strava compares your times with other people who have run those same routes.  I don’t know what QOM or CR stands for, but it basically means, you are the fastest person who has run there.  And yes, I’ve got TWO, thank you very much. ha!

And if you want to get real competitive…

You can seek out other saved routes (or Segments, as Strava likes to call them) and try to beat those runners’ times.

And, similar to Daily Mile, you can save your routes, add athletes as your friend, and comment/encourage others.

Check it out! And then add me as a friend and we can race!

So with that, I am out the door for a 11-miler, with a goal to hit up as may segments as possible.

Laters!

I am OFFICIALLY a Dietetic Intern

by Stephanie

Woohoo!

First Day of Dietetic Internship Orientation… CHECK!

Let’s see, where to begin!

Well, let’s first start with the other girls and guy – Our intern group is awesome.  We have such a lovely, diversified group of people – not only in location {we are literally from all corners of the U.S.}, but also in background, education, interests, etc.  I can’t wait to learn from all of these fascinating, charming, intelligent ladies and gentlemen.

And then there is Dr. Swadener {pronounced suede [as in the leather]-ener}.  She is the coolest.  She seems so understanding, and friendly, and chill, and easy to talk to.  It really seems like she realizes that we are human and not homework machines.  I get the feeling that she works hard to make this internship the best it can possible be to ensure we have a positive, enjoyable experience, while learning a ton {and of what we want}.

So yeah… the people? I’m digging them.

The majority of the day was spent going over forms, competencies, schedules, dress code… kind of like a huge syllabus.

Day 1 handouts + flash drive with more!

There is definitely a lot to take in, but I’m not feeling overwhelmed yet.

My plan is to read over all of the information to make sure I have a good grasp of everything, and then fill in any blanks in my calender.  You really need to be looking ahead, as most preceptors request to be contacted a week or two before you begin their rotation.

Some rotations also require a little bit of homework before starting too.  For example, this summer I was to read a book {Nestle’s What to Eat was my choice}, but other sites require a little brushing up on past material {food exchanges, adj. body weight calculations, BGs, etc.}, familiarity with government regulations, and of course, additional reading to support the activities and tasks we will performing.

Case studies, papers, and projects will also be assigned during the rotation.

In addition to the assignments, we have to ensure that the preceptors cover all of the necessary competencies, as required by the Academy of Nutrition and Dietetics.  Dr. Swadener provided a list of what we should be checking off at each site, but we have some freedom in requesting what we want to cover and learn.  I love that we have some say in our education.

As a reward for enduring the mountain of paperwork, Dr. Swadener treated us all to lunch at an awesome cafe downtown SLO, Big Sky Cafe.

Vegan and gluten-free friendly? Yes please!

Vegetable Stir-fry With Tofu & Crispy Sushi Rice :: Broccoli celery, spinach, carrots, snow peas & red peppers stir-fried with crispy sushi rice balls & tamari baked tofu cake

It was delicious.  So light and flavorful.  All of the girls everyone {I am really going to have to get used to the fact that there is a guy in the program} had good things to say about their meals.  I will definitely be back to check out the rest of their menu.  I am seriously going to go broke eating at all the amazing restaurants in SLO.

Tomorrow is another big day with the WIC Breastfeeding Coordinator!

Until then, signing out, Stephanie Wilson, Dietetic Intern {that sounds so cool!}.

Peace.
