Packin’ It Up

by Stephanie

Holy smokes! This week has gone flying by!

Let’s Recap:

  • Monday: Massive amounts of homework (aka busy work)
  • Tuesday: SDA Bake Sale, final presentation for Community Nutrition, last meeting with my two weight-loss clients
  • Wednesday: Final exam for Product Development, scrubbing the food lab, purchasing the senior gift for our advisors, SDA leadership hand-off meeting/party
  • Today: Last nutrition counseling session, more homework

Plus training for my half marathons.

And packing.

Which is just slightly depressing.

Yes, I buy my moving boxes.  I’m weird like that.  (I want my stuff to be clean and fresh. I think I get that from my Mom.)

It took me far too long to figure out how to put the damn boxes together.  Apparently, I am more of a linguistic learner, versus spatial, as according to Gardner.  Either that, or the directions are just terrible.

Success!

My next challenge was to figure out what to put in the boxes.

Trying to organize books into piles, somewhat dependent on my immediate need.  This pile needs work – I’m fairly certain I will not need He’s Just Not That Into You and French Women Don’t Get Fat any time soon. Ha!

Knick-knacks go in one pile.

Furniture-y stuff in another pile.

As you can see, I have a lot of work ahead of me.

I’m just trying to avoid this look as we drive the 3,000 miles across country.

Moving? Or going to the dump?

I’d much rather bask in my accomplishments…

Ahhhh.

A little surreal to be wrapping up the year.

Stay cool.

Poster Sesh

by Stephanie

Well, hello there.

I just can’t get myself in the mental headspace to do work.

+ 10 days until graduation.
+ 5 days of classes.
+ 3 busywork assignments. {whyyyyyyy?!}
+ 2 papers.
+ 1 exam.

All I really want to do is run and stretch and read.  I long for summer.

Just gotta keep my head in the game for a little while longer.

_____

As you may remember, I displayed my Senior Thesis – first at the NYSDA Annual Meeting & Expo, and second at the Imagine RIT Festival.  I would say that both events were a success!

Poster session!

Lots of booths & swag!

Saw President Sylvia Escott-Stump of the Academy of Nutrition and Dietetics speak (cool!!).

And spent some quality time with my girls.

My.friends.are.so.beautiful.

It’s so strange going from spending every waking moment together while we struggled our way through MNT, to hardly seeing them at all on campus.  Sad.

_____

Next up was the Imagine RIT Festival, wherein which the whole campus fills with students’ interactive demonstrations, exhibitions, and research.  It’s a day dedicated to innovation and creativity.

Jamie totally rocked it out!

A fun and educational weekend!

Alright, I’m off to run, followed by my first final exam {wish me luck! Blerg!}, and ending my day with our last Student Dietetic Association leadership hand-off meeting/party.

Wahhh! I am so nostalgic!

I love my RIT.

Pulling myself together now.

*deep breath*

Later Braniacs.

Road Trip!

by Stephanie

Goodmorning!

It is 3:56am as I am currently typing this (I am scheduling this post – so by the time you actually read this I will almost be to Albany).

I can’t believe I am actually up.

Pardon any and all typos.

I’ve already made it through my first cup of coffee and started on number 2.

I’ve got my clothes, camera, notebook, and car phone charger laid out for a day of fun at the New York State Dietetic Association’s Annual Meeting & Expo.

I’m going to be road trippin’ it up with Katie and Annie today – it’s going to be wild. A subaru filled with over-caffeinated soon-to-be college graduates… Oh yeah, it’s going down.

As wild as you can get while wearing pencil skirts and heels…

You can follow the action here, here, and here.

In the meantime, I will leave you with two of my least horrendous/eye-averting race photos {the majority of them were seriously horrible}.

I keep up with the boys.

And pass them.

Eat. My. Dust.

Okay, I’m delirious.

Time to get ready.

Happy Friday!

Back at it

by Stephanie

Guess who’s back among the living!

{or girl, rather.}

I’m feeling a ton better.

Yesterday I basically lived on my couch, read, watched bad tv, and cranked out a bit of homework.

I slept like a maniac too, made sure I was hydrated, and added an extra yogurt to the ole’ diet.

My stomach is still feeling a little bit uneasy, so I’m going to continue with a nice bland diet today.

I also made a complete mess of my apartment.

It’s amazing how messy things can get if you don’t pick up after yourself for a mere two days…

Don’t worry, mom [she's probably having a heart attack] — I at least picked things up this morning.

_____

So the exercise plan for today is to test of the stomach and go for a 3 mile jaunt, then BodyRock it UP.

Since my fever has broke, I don’t see why I can’t.

Then off to nutrition counseling, class, more counseling, and then home to get prepared for tomorrow’s trip to Albany!

We leave at 5:00 am! Blergggg.

I can’t remember if I told you why I was going…

I’m presenting my research on The Impact of Social Media on the Circulation of Nutrition Information at the New York State Dietetic Association’s Annual Meeting and Expo.

RIT was nice enough to pay for all of us girls to travel, attend, and display our work.

I’m really excited as this will be my first professional conference and opportunity to network with a ton of RDs!

Hopefully all of our work will be well-received!

Kashi, Soy, & GMOs

by Stephanie

What’s up! What’s up!

The other night, I came across this picture while procrastinating doing my homework.

Which lead me to this:

Damn, dawg!  94% of soy crops are genetically modified!

Which concerns me, as I love tofu and other soy-based products.

I don’t like to eat science experiments.

I like to keep it real, yo.

GMOs or Genetic Modified Organisms is the creation of new species through DNA cross-breading.  These new species have a higher resistance to pests, disease, drought, and yield greater crops.  From a business stand-point, this is awesome– but, consumption of these products (while still controversial), has been shown to increase immune and allergic reactions, among other unfavorable effects.

The only way to be sure you are not consuming GMOs is to purchase items that are Certified Organic.

This process of becoming Certified Organic is difficult.  Organic farmers must take every precaution to prevent cross-pollination and undergo rigorous audits.  Not to mention, cough up the cash to make all these changes, which affects every additional step in the purchasing process from production to market.

Now, before we throw Kashi under the bus [because I think they are a good company, trying to provide whole and healthy foods for a huge number of people, which is certainly a challenge] let’s take a look at their efforts to reduce GMOs.

Check out Kashi’s GMO Line-up.

Grocery Store List:

  • Autumn Wheat
  • Cinnamon Harvest
  • Island Vanilla
  • Strawberry Fields
  • 7 Whole Grain Flakes
  • 7 Whole Grain Puffs
  • 7 Whole Grain Pilaf

Good work, Kashi.  Hope to see more added to the list in the future!
