July Round-Up

by Stephanie

Can you believe my favorite month is almost done?

July was a blast!

Let’s Review:

Recipes

Vacation

And of course My Birthday!

And we can’t forget the Giveaway for a Free Kitchen Scale by SlimKicker. Incidentally, today is your last day to enter to win!

Also, there are a few lesser known activities here on the ol’ blog, such as a couple of extended family get togethers, and my foray into the wild world of swimming.  If you follow me on Daily Mile, then you may have caught a glimpse of my splashing around.  I don’t have any big announcements as far as signing up for a triathlon, but I am testing the waters, so to speak.  I am really bad, but getting better.  All swimming advice is welcome!

July also welcomed a new addition to my diet :: Fish!  A combination of constant fatigue and delayed recovery time prompted me to slowly start incorporating this delicious protein source  into my daily meals.  It seems to be helping, especially with recovery.  I’m still working on the fatigue part.  The past few runs I’ve been having weird blood sugar drops half way through.  I’m playing around with some different pre-run options and I’ll let you know which seems to be working!

So that brings us to August!

Now we get into Operation :: Internship Preparation.

I’ve been slowly checking things off my to-do list, but with the first of the month around the corner, I am starting to feel the pinch. 37 Days until Orientation!

  • Renew Academy Membership
  • Renew Nutrition Care Manual
  • Request transcripts
  • Receive Verification Statement
  • Get a physical/TB test
  • Change healthcare
  • Send all paperwork to my Internship Director
  • Find an apartment
  • Make arrangements for moving

It’s all very exciting, although I am slightly apprehensive to make another move to uncharted territory {Chicago, New York City, Rochester, and now add SLO to that list}.  Thankfully, through the wonder of Facebook, all the interns have made contact, and I think we are going to have a great bunch!

That’s all for now!  Check back tomorrow for the Giveaway Winner AND my Foodie Pen Pal Reveal!

And if you haven’t already, go enter the contest to WIN!

Later Gatorz!

Collin Comes to Town :: Part 4 – Eastern Washington

by Stephanie

Top of the morning!

Today we finish off the mini-series, “Collin Comes to Town.”

{Part 1 // Part 2 // Part 3}

We last left off as Collin and I took the pass over the Cascade Mountains into Central Washington.

After our whirlwind-jam-packed tour of Seattle, we needed a little R&R and a slower pace.

Our days kind of went like this…

Laying down by the river, visiting a local brewery, then taking pictures of me playing with the weeds…

Visiting the cute, Bavarian town of Leavenworth…

…which included a trip to the hat shop.

…and my first taste of gelato…

Mikey likes it! {This was right after I scorched my mouth on “The World’s Hottest Salsa.” Yeah, I was trying to be tough stuff, but instead left the shop crying.}

We stopped at local fruit stands…

…and tried out some honey.

…and ate a ton of cherries!

So good.  I didn’t allow Collin to buy any fruit on the Seattle side [much to his chagrin], simply because I knew we could get a better deal on this side of the mountain and that they would taste soooo much better.  {Speaking of a good deal – yesterday my dad and I got cherries for $1 a pound! And they are GOOD!}

We hiked up Saddlerock…

Taking pictures a long the way, of course.

Back side of the rock…

On top!

It’s a pretty little town, no?

We also spent a couple of days in Chelan. One day at the waterslides, which was a blast, and the other wine tasting.

Romping through the vineyards…

And taking cute #selfies…

All in all a perfect 12 days! [Which could have been extended for a whole month - there are so many things to do here!]

Maybe next summer, but until then…

Back to your regular programing.

Laters, baby.

p.s. Can you tell I have been reading the 50 Shades series…

p.p.s Go enter my contest!

Collin Comes to Town :: Part 2 – Pike Place Market & Seattle Waterfront

by Stephanie

When we last left off, Collin and I had hit up The 5 Point Cafe.

We walked off our full bellies and hit up Pike Place Market!

What a beautiful day for sightseeing in Seattle.

In fact, all weekend we had luck with the weather.

Both Collin and I snapped a million pictures. It was all so beautiful!

Next stop, the Seattle Waterfront!

The new Ferris Wheel had just opened and it was absolutely beautiful!

Unfortunately, the line was ridiculously long, so Collin and I decided to pass on a ride in favor of leisurely walking up and down the boardwalk.

We concluded our Waterfront explorations with a trip to Ye Olde Curiosity Shop – my favorite as a child.

Such a wonderful day!

Our next installment will finish up our Seattle trip, and bring us to the other side of the state for wine tasting and more fun in the sun.

Later Dudes!

Collin Comes to Town :: Part 1 – Seattle Restaurants

by Stephanie

So as I mentioned in my quick recap of my goings-on in July, my darling boyfriend took a whole 12 days off from work to come visit me on the other side of the country!  He must like me or something? ;)

It’s 2,554 miles from Rochester to Wenatchee – 500 miles 5 times over.  Although, he definitely did not walk, duh.

Prior to his visit, we created a google map {which I highly recommend you do before your next vacation – helped keep us so organized} of all the locations, and restaurants, and tourist traps we wanted to visit, which I then took and created an itinerary for us based on what was closest to what.  jam. packed.

On our first day, we decided that it was critical that we hit up The 5 Point Cafe for celebratory morning mimosas.

“Alcoholics Serving Alcoholics.”

And they ain’t lyin’. There were dudes in there drinking beer and mixed drinks at 8 in the morning. So being on vacation and all, we joined right in and placed orders for pint glass mimosas with our obviously hung over waiter. It was the day after the Fourth of July, after all. #nothatin’

The place had tons of stuff to look at. The walls were covered with stickers. And there were bras thrown on some sort of moose head…

C-Love checking out the scenery.

Not the location of mother’s day brunch, but certainly a fun way to kick off vacation. Plus, the food rocked!

It may have just been the giant mimosa talking…

I got a vegetarian scramble {with vegetarian bacon – who woulda guessed at a place like this!  Seattle rocked it out in the vegetarian arena.  Major props.} and C-dawg got a huge omelet. We split some pancakes.

A successful first meal for sure. In fact, we ate great all.trip.long.

Here are the highlights of the places we ate and drank for any of you traveling to the Seattle area:

After 5 Point, we headed down to Pike’s Place Market, but first we needed to stop and get coffee.

Well, coffee and a doughnut.

That would be a maple bar [for you poor, deprived East Coast folks] something, I could not believe, Collin had never tried before.  Delicious.

Next up: Pike’s Place Market!

Which we will save for the next installment.

Until then…

Rock it out!

July Is My Favorite Month

by Stephanie

Annnnd, we’re back.

Long time no see!

Man oh man, have I been having a ton of fun in the month of July.

So much fun that my social media endeavors have certainly taken a back seat to in-person connections and adventures, which I am okay with. {Although, sometimes I do feel a little anxiety about not updating regularly.}

Let’s take a quick look back at what July {and late June} held:

_____

Family Reunion:

At the end of June, my Gramma’s sister and brother-in-law celebrated their 50th wedding anniversary!

I will refrain from bombarding you with the massive amount of pictures I took.

_____

Chunky Carrot Guacamole:

Teaser Alert!

Lordy was this good.

Recipe coming soon to a computer near you.

_____

I celebrated my birthday!

Complete with a trip to the farmer’s market, champagne, and carrot cake!

Man, I’m getting old…

As you may or may not notice, those happen to be some Instagram photos. [Follow me!]

Oh, yes!  Birthday girl got a new iPhone!

And a food processor!

Woohoo! Can’t wait to start whipping up some tasty treats in this baby.

_____

And last, but most importantly…

My Boyfriend Came to Visit!

I’m obsessed with this picture of him.  Isn’t he so good looking? *sighhh*

We had so much fun during his 12 day visit!

I will certainly not do the trip justice in a quick update post, so keep your eye out for a few trip recaps in the future.

_____
Hope your July is going swimmingly as well!

Catch you on the flip side!
